So, here the steak is cooked like an entry, an appetizer, a first dish. But if you prefer, you really can cook this recipe like a main course, with a big piece of meat,.. a big pad of meat 😉 You have just to add french fries and it will be perfect to take a good meal.

> For the good Roast beef cooking times :
1. Rare, The beef pad (4 cm thickness) : 2.30 minutes hot fire / per side
2. Meat with thyms, medium heat, 3 minutes.

Ingrédients pour le pavé de boeuf au thym

• Beef pad : 0,8 lb – 12,5 oz = (350g/piece)
• Fresh thyme : a big bunch of thyme (+/- 0,2 lb)

Pour les légumes

• 1 zucchini : 1/2 piece
• 1 tomate : 1

Pour la marinade

• Green Lemon (juicy) : 1
• olive oil
• Salt and freshly ground pepper

Step by step recipe

Preparation of the ingredients:

• Cut the lime and squeeze the juice
• Cut the zucchini and tomato into thin slices
• Cut meat for « small » cut to length blocks (for presentation)
• Reserve the fresh thyme.

Step one: the marinade

In a bowl, add:
• the lime juice
• salt and pepper (adjust to taste)
• and olive oil.

Step Two : vegetables

• Spread the slices of zucchini and tomato on the plate.
• Pour the marinade over the tomatoes and slightly greater amount of zucchini.
• Reserve the remaining marinade.

Troisième étape : Le pavé de boeuf au thym

• Heat the frying pan with a little olive oil – high heat – for searing
• Toast the beef on each side
